Preparation Steps

  1. Preheat oven to 350ËšF (180ËšC).
  2. Slice potatoes into thin â…›-inch (3 mm) slices using a knife or mandolin.
  3. On a parchment-lined baking sheet, sprinkle half of the Parmesan and spread evenly.
  4. Arrange potatoes overlapping both vertically and horizontally until the tray is covered.
  5. Sprinkle remaining Parmesan, season with 1 tsp salt, and bake for 30 minutes until golden and flexible.
  6. In a skillet, heat 2 tbsp olive oil, cook onions until caramelized (15 minutes).
  7. Add ground beef, cook until browned, then stir in tomatoes, parsley, paprika, 1 tsp salt, and pepper. Remove from heat.
  8. In another skillet, heat 2 tbsp olive oil, cook spinach until wilted, add garlic and 1 tsp salt. Mix well and set aside.
  9. Combine spinach mixture with ricotta cheese.
  10. Spread spinach mixture evenly over baked potato sheet.
  11. Spread beef mixture on top, then sprinkle mozzarella cheese.
  12. Roll up tightly using parchment paper and place seam-side down on the tray.
  13. Bake for 15 minutes until set and heated through.
