Chef's Tip of the Day

Salt your pasta water like the sea. Use 1 tablespoon of kosher salt per litre of water. This is the only chance to season the pasta itself — sauce alone can't compensate for under-seasoned noodles. The water should taste pleasantly salty, not like the ocean.
