Cooking Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Make several slices across each chicken breast, about ½ cm (¼ inch) apart, cutting 85% through (don’t cut all the way).
  3. In a pan over medium heat, cook chopped bacon until it begins to crisp.
  4. Add the chopped spring onions and cook for 1 more minute.
  5. Stir in the cream cheese and cook until fully melted and creamy. Remove from heat and let the filling cool slightly.
  6. Using a spoon, fill each slice of the chicken breasts with around 1 teaspoon of the cooled bacon-cream cheese mixture.
  7. Place the stuffed chicken breasts on a baking dish and bake in the center of the oven for 18-22 minutes, or until the chicken is cooked through and juices run clear.
