 Preparation Steps

  1. Heat 2 tablespoons of oil on low to medium heat in a large pot.
  2. Sear the chicken until golden brown. Season with salt and pepper. Remove from the pot and set aside.
  3. In the same pot (do not clean it), add the remaining tablespoon of oil.
  4. Fry the onions, carrots, and potatoes until softened.
  5. Return the chicken to the pot and pour in 4¼ cups water. Bring to a boil, then cover and simmer for 10 minutes.
  6. Add peas and curry paste, stirring until everything is well combined.
  7. Simmer for a few more minutes until the curry thickens and the flavors blend together.
  8. Serve hot with steamed rice.

This Chinese Chicken Curry tastes best when served over jasmine or basmati rice.
